Abstract:

PURPOSE: Lactobacillus is cultured in an aminoacid solution containing arginine under anaerobic conditions and the resultant culture mixture is added to processed food product to prevent the product from denaturing effectively and safely.

CONSTITUTION: An aminoacid solution containing arginine is combined with saccharides, sterilized and inoculated with a lactobacillus such as Bifidobacterium bifidum, then cultured in anaerobic conditions at 30W40°C and 5W8pH for 2W 10 days to obtain the objective denaturation preventive. The amount added to the processed food products is 0.005W1wt% based on substance containing pure guanidine.
