Abstract:

To provide a process paper acting the roll of preventing the inner surface of a container from directly contacting bread dough by being fed in combination with the bread dough into the electrode-type bread baking container, taken out of the baking container with the baked bread after the baking treatment, entering a maturing device accompanied with the baked bread to be subjected to the maturing treatment by being sent to the maturing step as it is to act the roll for preventing the maturing device from directly contacting the baked bread, and capable of being beautifully peeled off from the formed bread after the maturing treatment.

The process paper for the electrode-type bread baking is a one-side glazed paper including an unsized neutral paper made from an unbleached pulp and a semibleached pulp as a base, having a density of 0.6-1.0 g/m3, a water vapor permeability of ≥2,800 g/m2×24 h measured based on JIS Z 0208, and a Cobb water absorption of ≥2.5 g/m2 measured based on JIS P 8140, and has a glazed surface of the surface coated with a treating agent for easy peeling.
