Abstract:
PURPOSE: To produce enzymes including B-type protopectinase activated in an acidic range by utilizing a microorganism belonging to filamentous fungi.
CONSTITUTION: A microorganism belonging to filamentous fungi is cultured to produce enzymes including a novel B-type protopectinase which is active under acidic conditions of pH2 to 7, optimal at 3 to 5. The invention also relates to its use, in particular, treatment of plant tissues containing pectins with the enzyme or its solution including protopectinase.
