To provide a process for fermenting a lactic acid bactiller by utilizing a material which is a fermentation-activating factor having activities for stimulating the proliferation of a fermentate, as a result, affecting the oxidation rate of a proliferation medium, and preferably making final activities of the fermentate good.
This method comprises fermenting one selected from the genus consisting of the lactic acid bacillus, preferably Lactobacillus delbrueckii strain and bulgaricus strain, and Streptococcus thermophilus in a medium containing at least one saccharide of a fermentation-activating factor, selected from the group consisting of a maltodextrin, a branched maltodextrin, a soluble starch and an oligosaccharide singly or as a mixture.
