Abstract:

To provide a process for stabilizing protein without imparting an adverse effect on viscosity of the environment in an acidic environment.

The process comprises following steps, (a) a step adding a purified PME enzyme capable of carrying out a block-wise enzymatic de-esterification of pectin, to pectin free from previous treatment with polygalacturonase to substantially reduce length of the pectin skeleton, (b) a step preparing the block-wise enzymatic de-esterified pectin by the purified PME enzyme capable of carrying out a block-wise enzymatic de-esterification of pectin, (c) a step adding the pectin obtained by the block-wise enzymatic de-esterification to an acidic environment containing at least one protein, and (d) a step stabilizing the protein by the block-wise enzymatic de-esterified pectin.
