Abstract:

PURPOSE: To obtain a processed food of grains low in sodium content in spite of possession of saltiness by using a milk serum mineral prepared by treating whey with an ion exchange resin to give a not adsorbable fraction and removing lactose from the fraction.

CONSTITUTION: Whey is preferably treated with a cation exchange resin to give a not adsorbable fraction, which is used as a main component, concentrated, cooled and lactose is crystallized and removed to give a milk serum mineral. The milk serum mineral containing 3-15% based on the whole solid material of protein is mixed with an alkali metal salt and/or an alkaline earth metal and used as saltiness of a processed food of grains to give the objective processed food.
