Abstract:

PURPOSE: A processed food that is made inexpensively by grinding a not hot kind of Guinea pepper, being raw or dried, and adding the resultant Guinea pepper having taste like sea urchin eggs, thus showing taste like sea urchin eggs and being free from cholesterols.

CONSTITUTION: A not hot kind of Guinea pepper, which is obtained by hybridizing Guinea pepper with green pepper, is ground directly or after dried to produce a kind of Guinea pepper containing a large amount of red carotenes and having taste like sea urchin eggs. Then, the ground pepper is added to MISO (soybean paste), boiled fish paste (KAMABOKO) or other food products to produce the objective food products having taste like sea urchin eggs. The resultant food includes no cholesterols causing arteriosclerosis or the like, but a large amount of carotenes, thus being good as health food and having good taste like sea urchin eggs.
