To obtain the subject food useful as an additive that contains a large quantity of γ-aminobutyric acid (hereinafter called as GABA), which has a hypotensive effect, and the food it to be added in powdery condition to Japanese wheat noodle, cookies, buckwheat noodles, ice cream, bread, etc., by anaerobically processing mulberry leaves which contains a relatively large quantity of glutamic acid.
This method for producing the mulberry leaf food comprises placing mulberry leaves, which contains many kinds of amino acids as well as a large quantity of glutamic acid as a precursor of GABA, in a vessel such as a plastic container; metabolizing the leaves under anaerobic conditions by such a way that the vessel is allowed to stand at room temperature in an atmosphere in which air is replaced with nitrogen; and steaming and then drying the anaerobically processed mulberry leaves in hot air flow, thus obtaining the objective food of clear green color, which contains GABA in a large quantity.
