Abstract:

To provide a processing compsn. for food that removes the bacteria sticking to vegetables, etc., is excellent in long-term preservation stability and is adequate for fresh vegetables, etc., for which the utilization of sterilization by heating is not possible, by incorporating a monoglyceride polyvalent carboxylate, hydrolitic enzyme, and adipic acid into this compsn.

This compsn. contains (A) preferably 5 to 30(wt.)% monoglyceride polyvalent carboxylate expressed by the formula (R1 is a 7 to 17C alkyl, alkenyl; either of Z1, Z2 is the residue of polyvalent carboxylic acid and the other is H, the residue of polyvalent carboxylic acid], (B) preferably 0.1 to 5% hydrolitic enzyme of a cellulase system and (C) preferably 50 to 85 adipic acid.
