Abstract:

PURPOSE: To obtain a fish not requiring removal of bone in eating by releasing vertebral part by a specific spatula from a meat part of a fish from which an internal organ part is removed by suction and drawing out the vertebral bone part together with the circumferential ventral bone.

CONSTITUTION: The tip part of an edge tool is introduced to the base part of a gill cover and the anal part of a fish, an internal organ part including intestine is cut off, a suction pipe is inserted from the oral cavity, the fin part is cut off and the internal organ part is sucked and removed. The edge tool is introduced to the anus, etc., the base part of the vertebral part is cut, a spatula 6 is inserted from the oral cavity, etc., into the fish and a meat part is released from the vertebral part while pressing a dented part 7 against the vertebral part along the one side of the vertebral part. The fish is turned upside down, the spatula 6 is inserted into the fish in the same way, the meat part is released from the vertebral part and the released bone is cut at the base part of head and the rear part of the tail fin. A nipping tool is inserted from the oral cavity to the fish, the vertebral part is nipped and drawn out together with the circumferential ventral bone part to give the fish having the ventral side and the back side not teared at all.
