PURPOSE: To provide a processing method enabling the quality of a walleye pollack roe product to get uniform through uniform migration toward the center of the roes of salt, seasoning, colorant, etc., during the salting process for such roes without significantly depending on the state of the roes.
CONSTITUTION: Walleye pollack roes are salted while applying vibration on them.
