Abstract:

PURPOSE: To obtain starch having high temperature to exhibit the viscosity peak, capable of keeping high viscosity, and exhibiting little lowering of the viscosity under heating, by adjusting the concentration and pH of a potato starch suspension within specific respective ranges, stirring the starch in hot water, dehydrating and drying the starch.

CONSTITUTION: A potato starch suspension having a potato starch concentration of adjusted to 20W40% and a pH of 5W8 is maintained in hot water kept to a temperature lower than the gelatinizing temperature of the starch preferably to 40W55°C for 30minW20hr optionally under stirring and the starch is dehydrated and dried to obtain the objective processed potato starch.

USE: Since the starch has improved heat-resistance and low dissolution loss in heating, it is suitable as a raw material of a retort food to be treated at a high temperature or of FEN-TIAO (sticks of bean jelly).
