Abstract:

PROBLEM TO BE SOLVED: To produce lysozyme that is useful as a bactericidal agent, a food preservative and the like in a large amount by transformation through a DNA of foreign gene.
SOLUTION: A yeast cell, preferably a transformable yeast cell from Saccharomyces (AH22, GRF18 or the like), is transformed with a DNA of a foreign gene containing the cDNA of poultry lysozyme and cultured under suitable conditions for its growth. This DNA includes at least one copy of a fragment encoding 1,4-β-N-acetylmuramidase and a fragment that encodes a sequence of a signal peptide acting on the above fragment so that the fragment that may be expressed to secret an active protein in the cells is located before the former fragment encoding the 1,4-β-N-acetylmuraminase. This transformed Saccharomyces yeast actively produces lysozyme and the strains GRF18 (plys Δ49) and AH22 cir° (plys 50) have been stipulated as CBS7130 and CBS7129, respectively.
