Abstract:
PROBLEM TO BE SOLVED: To obtain an acetobacter powder capable of preserving for a long period of time and effectively suppressing the reduction of aldehyde oxidase activity during a preservation thereof by dispersing an acetobacter in a buffer solution of acidic pH containing saccharides and lyophilizing.
SOLUTION: This acetobacter powder is obtained by dispersing an acetobacter as a wet bacterial cells in a buffer solution of pH5-7 containing 10-30wt.% saccharides such as disaccharides of sucrose, lactose and maltose, and monosaccharides of glucose, galactose and fructose, and then lyophilizing.
