Abstract:

PROBLEM TO BE SOLVED: To provide a method for efficiently producing an alcoholic beverage or a fermented seasoning good in flavor.
SOLUTION: A yeast, belonging to the genus Saccharomyces, having the resistance to pyruvic acid analogs and capable of regulating the maximum value of the pyruvic acid content in a solution prepared by compression filtering or centrifuging an unrefined liquor or seasoning to ≤200ppm in alcoholic fermentation is used in the method for producing an alcoholic beverage and a fermented seasoning.
