Abstract:

PURPOSE: To obtain the powder useful as a raw material or additive for feed and a raw material for healty food each having immuno-potentiating action by heat-treating yoghurt powder, solubilizing a protein in yoghurt with an alkali agent and drying and powdering the yoghurt.
CONSTITUTION: This method for porducing yoghurt powder is to heat-treat yoghurt as ≥55°C and solubilize a casein part of a protein in yoghurt into water by an alkali agnet, subjecting the treated yoghurt to treatment, etc., adding a surfactant or a drying auxiliary and drying the yoghurt by spraying and drying, etc. Thereby, the activity of immuno-potentiating substance derived from lactobacillus, etc., is retained and powdery yoghurt reduced in adhesion and hygroscopic property is obtained.
