PURPOSE: To efficiently produce a microorganism containing an amidase enzyme in an elevated level, by culturing the microorganism containing the amidase enzyme in a proliferation medium containing an amide under condition of nitrogen limitation at a dilution rate in the range of 0.1-1.15/hour.
CONSTITUTION: A microorganism containing an amidase enzyme or a microorganism capable of inducing the enzyme is introduced into a proliferation medium containing an amide as a nitrogen source. Then the microorganism is cultured under conditions of nitrogen limitation at a low dilution rate in the range of 0.1-1.15/hour for a period sufficient to substantially increase the levels of amylase activity. The culture temperature of the microorganism is 34-36°C and the pH is suitably at pH5.8-7.6. A cell strain such as one from Methylophilus methylotrophus is the preferable example of the microorganism.
