Abstract:

PROBLEM TO BE SOLVED: To obtain amylase-resistant granular starch having a total content of dietary fiber of 12wt.% or above by heating high-amylose starch having an amylose content of 40wt.% or above and a total water content of 10-80wt.% at 60-160°C.
SOLUTION: This resistant granular starch of a total content of dietary fiber of 12wt.% or above is made by heating high-amylose starch having an amylose content of 40wt.% or above and a total water content of 10-80wt.% at 60-160°C. The starch as the starting material is a natural or modified one extracted from seeds of a vegetable biotechnologically improved so that it may produce seeds containing starch which contains a linear fraction namely amylose in a high content, corn, wheats, potatos and beans. The resistant granular starch contains starch converted into amylase-resistant one not digestible by amylase in the small intestine and therefore it is used in a low-calorific food.
