Abstract:

To provide a method for freezing persimmon, without turning it black, by treating an as-received persimmon to remove the astringency and rapidly quenching the whole body to a specific temperature, bypassing a drying step.

This method treats an as-received persimmon to remove the astringency and directly, (i.e., bypassing a drying step) quenching the whole body rapidly to -40 to -70°C without using a cooler. It is preferable to treat the fruit with carbon dioxide at normal temperature for 3 to 10 days, and then to rapidly quench it. It is also preferable to preserve the persimmon at normal temperature in carbon dioxide gas for 6 h to 14 days for the astringency- removing treatment. It is more preferable to quench it to -50 to -70°C.
