Abstract:

PROBLEM TO BE SOLVED: To obtain the subject beans capable of eating as a food preserved in sugar by pre-treating beans for tasty beverage and removing unpleasant taste such as bitter taste, though products obtained by immersing beans and fruits usually used for eating, e.g. sugared beans or orange peel have been known hitherto, products obtained by immersing beans for tasty beverage used as raw materials for tasty beverage, e.g. cacao beans or coffee beans into sugar have not been known and the direct eating of beans for tasty beverage have been nearly unknown because of strong bitter taste, excluding two or three exceptional uses such as eating cacao beans as chocolate.
SOLUTION: Beans for tasty beverage, e.g. cacao beans, coffee beans, guarana beans or cola beans are immersed in water or a diluted aqueous solution of salts such as sodium hydrogen carbonate, and then, immersed in a seasoning liquid such as a sweetener solution for a time required for absorbing the seasoning solution into beans for tasty beverage, and taken out. Then, the beans are dried to provide the objective beans for tasty beverage capable of directly eating.
