Abstract:

PURPOSE: To obtain the title product having improved flavor, color tone, body, etc., by removing an ingredient having offensive smell and fermentation retardant using each specific absorbent and precise filter material before fermenting beat of raw material.

CONSTITUTION: A beat of raw material is normally crushed and squeezed and then offensive ingredient, fermentation retarding substance, fine suspension substance, colloidal substance, etc., is removed from the raw material using an absorbent containing a zeolite and active carbon as active ingredients and precise filter material having ≤0.8μm pore size. Then the raw material from which the ingredient having offensive smell has been removed is fermented to provide the aimed product.
