Abstract:
To provide a method for producing black tea having improved aroma.
This production of black tea comprises a wilting process to wilt green tea leaves, a maceration process, a fermentation process and a roasting process for bringing fermented tea to black tea and the green tea leaves are treated with a combination of a phenol acid and an amino acid before the fermentation process.
