Abstract:
PURPOSE:To obtain inexpensive blended horseradish powder capable of substaining pungent taste, aroma, color, etc., of Eutrema wasabi Maxim., by drying roots, leaves and stems of Eutrema wasabi Maxim. by a constant- temperature vacuum drying method, powdering the dried roots, etc., and blending powdery Armoracia rusticana Gaertn. B. Mey. et Scherb. therewith. CONSTITUTION:One or more species selected from Eutrema wasabi Maxim. cultivated with underground water, cultivation in farmland or water culture using artificial equipment are prepared. Pieces 13, such as main roots, lateral roots, leaves and stems, of the Eutrema wasabi Maxim. are contained in drying shelves 12 installed in a drying chamber 1 of a constant temperature vacuum dryer. A ventilating fan 3 is then operated to evacuate the interior of the drying chamber 1 and the pieces 13 of the Eutrema wasabi Maxim. are simultaneously dried while keeping the interior of the drying chamber 1 at a constant temperature with an air-conditioning device 9. The dried pieces 13 of the Eutrema wasabi Maxim. are subsequently powdered in a flour mill and blended with powdery Armoracia rusticana Gaertn. B. Mey. et Scherb. to afford the aimed blended horseradish powder.
