Abstract:

PURPOSE: To prevent melting of flesh and obtain tasty bonito gut pickled in salt by cutting liver and flesh of bonito, separately pickling cut liver and flesh and blending and aging the pickled liver and flesh.

CONSTITUTION: A liver of bonito, to which as necessary hot water is applied and flesh of bonito are cut and separately pickled in salt for 1 week and then blended and aged for about 1 week.
