Abstract:

PURPOSE: To prevent discoloration and the generation of an irritating odor and produce a branched polysaccharide having a high content of 1, 6 linkages by the moist heat treatment of a polysaccharide containing an equilibrium amount of an adsorbed organic or inorganic acid.

CONSTITUTION: A polysaccharide (e.g. starch or glucan) containing an equilibrium amount of an adsorbed organic acid (e.g. acetic or citric acid) or inorganic acid (e.g. hydrochloric or sulfuric acid) is peferably mixed with a monosaccharide and/or oligosaccharide and then subjected to moist heat treatment to produce a high content of 1, 6 linkages in the polysaccharide molecule. It is more desirable to increase the content of 1, 6 linkages in the polysaccharide molecule by at least 5% through the treatment. The equilibrium amounts of adsorbed organic and inorganic acids respectively are preferably 1-10wt.% and 0.03-0.1wt.% based on the polysaccharide used.
