Abstract:

PURPOSE: To obtain bread having excellent baked color, taste and texture free from release phenomena of crust by baking dough of bread, then steaming bread, then freezing, rebaking so that water content in the crust of bread and interior can be uniformed.

CONSTITUTION: Dough of bread is baked, then steamed and successively frozen. Then the bread is rebaked or reheated to give the aimed bread.
