PURPOSE: To obtain uniform bread in feeding bread dough to plural bread molds arranged in the direction perpendicular to arrangement direction of a forming and fermenting chamber and a baking chamber by repeatedly feeding the dough by a specific method.
CONSTITUTION: Bread dough 46 is fed to plural bread molds 46 arranged in the direction perpendicular to arrangement direction of a forming and fermenting chamber 19 and a baking chamber 20, the bread dough 40 is formed and molded and baked to produce bread. In the operation, as a method of feeding the bread dough 40 to the bread molds 46, a given amount of the bread dough 40 is fed to a position most apart from the baking chamber 20 in the bread molds 46. Then the given amount of the bread dough 40 is fed to a position adjoining the bread dough 40 in the bread molds 46 fed in the last time and closer to the baking chamber 20 and these operations are repeated. Finally, the given amount of the bread dough 40 is fed to a position closest to the baking chamber 20 in the bread molds 46 to give uniform bread.
