Abstract:

PURPOSE: To obtain a method for producing butter cakes good in texture by an all-in-mix process and a composition of fats and oils for confectionery, suitable therefor and assuming the plasticity at ordinary temperature.
CONSTITUTION: The objective composition of fats and oils for confectionery is obtained by using an water-in-oil type composition of the fats and oils capable of assuming the plasticity at ordinary temperature as a component of the fats and oils, has 0.2-10wt.% content of an emulsifying agent based on the total amount of the composition of the fats and oils and is capable of producing butter cakes according to an all-in-mix process and assuming the plasticity at ordinary temperature. The water-in-oil type composition of the fats and oils for the confectionery capable of assuming the plasticity at ordinary temperature can be used to produce the butter cakes good in texture according to the all-in-mix process.
