Abstract:

To provide a method for readily producing calcium 2-hydroxy-4- methylthiobutanoate without bi-producing polycalcium-2-hydroxy-4- methylthiobutanoates in high yield by a method not inducing a problem of treating an inorganic salt waste.

This calcium 2-hydroxy-4-methylthiobutanoate composition is produced by hydrolyzing 2-hydroxy-4-methylthiobutyronitrile with a fungus or its treated substance of a microorganism belonging to genus Variororax or genus Arthrobacter to obtain ammonium 2-hydroxy-4-methylthiobutanoate and bringing into contact with a calcium source selected from calcium oxide, calcium hydroxide and calcium carbonate.
