Abstract:

PURPOSE: To efficiently produce confectioneries of an entirely new kind having a baked brittle and fragile confectionery coated with a candy and a unique flavor in a short time.

CONSTITUTION: This method for producing a candy-coated baked confectionery is to add 15-25 pts.wt. water. to 100 pts.wt. mixture of 20-80wt.% sugar with 80-20wt.% thick malt syrup, dissolve the mixture, boil down the resultant solution until the water content attains ≤5wt.%, further mix water with the mixture so as to provide 15-25 pts.wt. water content based on 100 pts.wt. mixture of the sugar with the thick malt syrup, spray the resultant aqueous solution of the candy on the baked confectionery and dry the prepared confectionery.
