Abstract:

PURPOSE: To obtain a new food by preserving cattle tongue as a food material in 'miso' (fermented soybean paste) in the area of meat products.

CONSTITUTION: Cattle tongue is first prepared and preliminarily seasoned and then steamed. Thereby, the cattle tongue can be defatted and freed from the smell or odor with likes and dislikes unique to the cattle tongue, leading to provision of cattle tongue 1 as a low-caloric, healthy diet food as an example of the trend of recent dietary life along with being capable of widely enjoying the cattle tongue with likes and dislikes. Then, the cattle tongue 1 steamed is cooled, preserved in a 'miso' bed and aged; thereby, obtaining the aimed cattle tongue 1 with mild palate.
