PURPOSE: To obtain the subject food, having good shape retaining properties and chewiness and excellent in texture by adding water and gelatin to natural cheese, thermally melting the resultant mixture, covering and forming the melt with a fish meat paste, then vacuum packaging the formed product and thermally sterilizing the packaged product.
CONSTITUTION: Water and gelatin are added to natural cheese and the resultant mixture is thermally melted in an emulsifying vessel, etc., to prepare a cheese, which is then covered and formed with a fish meat paste, contained in a container, such as plastic tray, further vacuum packaged and thermally sterilized to afford the objective cheese food. Furthermore, the water and gelatin, together with a molten salt, are preferably added to the above-mentioned natural cheese.
