Abstract:

PURPOSE: To produce a cheeselike food having the flavor and viscosity of cheese, by adding cheese, viscosity increasing agent, etc. to a minced fish meat refined with an alkaline saline solution.

CONSTITUTION: A fish meat of a bonito or walleye pollack, etc. is ground to give a minced meat, which is then refined with an alkaline saline solution and then flowing water, and dehydrated to afford a refined minced fish meat. Skim milk powder, cheese and a visocisty increasing agent, e.g. edible natural gum, are added to the refined minced fish meat, and the resultant mixture is further ground, vacuum packaged, coagulated and bound under heating and pressurizing.
