PURPOSE: To obtain the subject oil and fat useful for a modified milk for infants requiring cholesterol without deteriorating the flavor and preservation stability of the oil and fat by blending oil and fat with a solution of cholesterol in oil and fat containing a small amount of the cholesterol added to specific oil and fat.
CONSTITUTION: This method for producing the objective oil and fat is to blend (A) oil and fat such as cotton seed oil, soybean oil, corn oil, palm oil, fish oil, beef tallow, lard or a medium-chain fatty acid triglyceride with (B) a solution of cholesterol in oil and fat containing 0.1-6wt.% cholesterol added to oil and fat containing ≥60wt.% 4-14C saturated fatty acid in the fatty acid component (e.g. coconut oil, palm kernel oil, the medium-chain fatty acid triglyceride or tributyrin).
