Abstract:
PURPOSE: To obtain the title cod roe having excellent taste and appearance from low-quality raw material of cod roe by removing a specific amount of water from the raw material of cod roe, preserving with salt, then immersing the cod roe in warm water for a short time and immediately immersing in cold water.
CONSTITUTION: Water of raw material of cod roe is removed by 10-25 % loss ratio in weight, the raw material of cod roe is preserved with salt, then immersed in warm water at 60-95°C for a short time and immediately immersed in cold water at ≤10°C to give the objective cod roe.
