Abstract:
To provide a method that can effectively and economically prevent the milk components from coagulating and precipitating in the production of coffee drinks containing milk components.
Roasted coffee beans are extracted by dripping, and milk components are added to the extract to produce the objective coffee drinks where the roasted coffee beans are alkali-treated by soaking them in an aqueous alkali solution before the extraction process.
