Abstract:

PURPOSE: To obtain a composition comprising a κ-casein glycomacropeptide with a high content from a milky whey.
CONSTITUTION: A milky whey containing κ-casein glycomacropeptide is regulated to pH ≥6, then heated at 40-79°C for 2-30min and subsequently treated with a precise filtration membrane having ≤0.5μm pore size or an ultrafiltration membrane having ≥500,000Da fractionation molecular weight to afford a concentrate, which is regulated to pH ≤5.5 and then further treated with the precise filtration membrane having ≤0.5μm pore size or the ultrafiltration membrane having ≥500,000Da fractionation molecular weight. Thereby, the objective κ-casein glycomacropeptide is recovered into a permeate.
