PURPOSE: To obtain the subject composition in an industrially advantageous way by heat treatment of milky whey with the pH value adjusted to a specified level to produce a whey protein-associated product which is then put to membrane separation to recover κ-caseinglycomacropeptide in the filtrate.
CONSTITUTION: A milky whey with its pH value adjusted to ≥5.0 is treated at ≥80°C to produce a whey protein-associated product, which is then eliminated by membrane separation using a precision filtration membrane ≤0.5μm in pore size or an ultrafiltration membrane ≥50000Da in fractionating molecular weight. The resulting filtrate is concentrated and/or desalinated to eliminate lactose and minerals and then dried to recover κ-caseinglycomacropeptide-contg. powder, thus easily, efficiently obtaining the objective composition on an industrial scale at low cost. The above-mentioned heat treatment is pref. made at 80°C for ≥5min or at 120°C for ≥5sec.
