PURPOSE: To provide a method for producing a free-flowing cooked rice beverage, capable of maintaining the form of rice grains and rich in fluidity.
CONSTITUTION: This method for producing a cooked rice beverage is to dip milled rice grains in an aqueous solution of an organic acid at pH 3-6, drain water therefrom, subsequently place the milled rice grains in a hermetically sealed container for the beverage, fill water in the container, then hermetically seal the container, cook and sterilize the rice grains at a high temperature under a high pressure. An ingredient material, a seasoning and, as necessary, a spice can further be contained in the cooked rice beverage. The resultant cooked rice beverage is a cooked rice rich in fluidity with a drinking sense as different from a conventional canned food of cooked rice with an eating sense and is suitable as a cooked rice beverage for supplying calories or appeasing the hunger sold by a hot vender.
