Abstract:

PURPOSE: To obtain tasty cream having stabilized emulsion and good foaming properties by admixing an aqueous salt solution to raw cream under specific conditions.
CONSTITUTION: Raw cream is kept at 15-45°C, and an aqueous solution of a salt such as sodium carbonate is added to the raw cream in an amount of about 0.01-3wt.% based on the total amount of the raw cream. No deterioration in taste and yellowing are caused with heat and the objective cream containing only milk lipid is obtained.
