Abstract:

PROBLEM TO BE SOLVED: To obtain a curry-like tasting food product having a thickened smell by adding such a small amount of Miso paste (fermented soybean paste) that cannot give the sense of the Miso taste but imparting only its body and sweetness to the food product.
SOLUTION: Wheat flour and hardened oil are heated up to about 120°C, as they are stirred, to prepare a wheat rue, then table salt, sugar, corn starch, curry powder, amino acid seasonings, powdery milk, beef extract, chutney, hardened oil and the like are added to the wheat rue. In addition, Miso paste (fermented soybean paste) in such an amount that cannot give the sense of Miso taste is added to the mixture and they are heated up to about 106°C for about 40 minutes, as they are agitated, to prepare a curry rue, which is charged in a vessel and cooled down to room temperature to give a solid curry rue. This solid curry rue is added to hot water and stirred whereby the objective curry-like taste food product of thickened smell having the body and sweetness originated from Miso paste is obtained.
