Abstract:
PURPOSE: To obtain an oxidation resistant dehydrated meat product useful as meat for trimmings by bringing meat into contact with ascorbic acid, etc., heating and drying it. CONSTITUTION: Meat such as beef or chicken is preferably cut into dice each having 0.03-6.9cc volume and it is brought into contact with an aq. soln. contg. ascorbic acid or its salt and a meat flavor obtd. by Maillard reaction preferably by 1-10% and 0.2-20%, respectively, based on the weight of the soln. Contact time is, e.g., 10min to 2hr. The meat is then heated by broiling with soy, microwave heating, steam heating or other method and it is dried preferably to 1-5% water content to obtain the objective meat product.
