Abstract:

To obtain a dextran having a preferable texture and taste, useful for producing a food and a cosmetic composition, by culturing a specific strain capable of producing a dextran under prescribed conditions.

A previously cultured material of a strain of Leuconostoc mesenteroides ssp. cremoris capable of producing a dextran [e.g. deposited as I-1692 to CNCM(Collection Nationale de Cultures de Microorganismes)] is inoculated into a medium containing sucrose and fermented at 25-35°C for 10-20 hours. The culture product is lowered to pH5-5.5 and preserved at 0-10°C for 16-48 hours.
