Abstract:

To provide a method for producing stable DHA(docosahexaenoic acid)-containing bean curd, drinking bean milk and their dried powder, low in the costs of raw materials without affecting the taste, even when a DHA- containing fish oil is mixed in a high concentration.

A bean milk and a DHA-containing fish oil are mixed and stirred in a weight ratio of 1:0.2 to 1:1. The produced emulsified product of the DHA-containing fish oil is further diluted with a bean milk to produce a drinking bean milk having a desired DHA concentration. The drinking bean milk is coagulated with a coagulating agent to produce a DHA-containing bean curd. Since the same bean milk as a raw material for producing conventional bean curd and drinking bean milk is used as the emulsifier, the products whose tastes and physical properties are not affected can be produced, even when the DHA is contained in a high concentration. If necessary, the bean curd or the drinking bean milk is lyophilized, vacuum-dried or spray-dried to produce the dry powder.
