PURPOSE: To enable to produce dimaltosyl cyclodextrin in a short time by treating maltosyl cyclodextrin in the presence of an amylase such as a pullulanase activity-having amylase such as amylase APE.
CONSTITUTION: Maltosyl cyclodextrin (hereinafter referred to as CD) is diluted into a solution having a prescribed solid concentration and subsequently treated with a prescribed amount of a pullulanase activity-having amylase such as amylase APE produced by Bacillus.circulans F-2 (FERM 7361) belonging to the genus Bacillus at a temperature and a pH which are optimal for the enzyme. The produced dimaltosyl CD is separated and collected from the reaction solution by the use of reverse phase distribution chromatography using an nucleosil NH2-RR-5U column. The dimaltosyl CD can be thereby efficiently produced in an extremely short time to highly contribute to the development in the applications of CD in the fields of medicines, foods and other general industries.
