To obtain dough for bread which may be heated with microwaves by liquefying a starch raw material by at least one of carbohydrases in the presence of water, heating and drying the emulsion obtd. from this starch raw material to obtain powder and mixing this powder with other raw material.
The starch raw material is liquefied by at least one of the carbohydrases in the presence of the water and this liquefied starch raw material is added to water, vegetable oil, starch raw material and lecithin to obtain the emulsion. This emulsion is heat treated and is further dried to obtain the powder. Next, 3 to 20 pts. (wt.) this powder is mixed with the mixture contg. 40 to 57 pts. wheat flour, ≤6 pts. sugar, ≤2 pts. salt, ≤3 pts. swelling agent, ≤2 pts. emulsifier, ≤2 pts. alpha-amylase, 15 to 35 pts. water, ≤10 pts. fat, ≤3 pts. gluten and ≤4 pts. milk, by which the desired dough for bread is obtd.
