PURPOSE: To produce a large amount of dough for confectionery of stabilized quality such as dough for puff in no need of skilled persons by mixing two kinds of starting substances, adding hot water, then adding another starting substance.
CONSTITUTION: In the couple of mixers, the first one is used to mix the first starting substance such as wheat flour or the like and the second starting substance such as fat and oil and the mixture is continuously fed into the second mixture with the first pump. Then, the warm water is prepared by mixing water and steam in the third mixer and fed into the second mixer with the second pump. Then, the mixture of the starting substances and the warm water is introduced into the fourth mixer and simultaneously the third starting substance such as liquid egg is fed by the third pump. They are mixed in the fourth mixer, whereby the dough for confectionery can be hygienically produced through an automated continuous process.
