Abstract:

PURPOSE: To obtain the title tasty product with unique mouth feeling, easy to eat, and good for health and beauty, etc., by forming a dough produced mainly from sweet potatoes or pumpkin followed by frying at relatively low temperatures.

CONSTITUTION: Firstly, a dough containing ≥50wt.% of potatoes or pumpkin is produced by incorporating a thickening such as starch or wheat flour and, according to the kind of aimed product, further incorporating egg, fatty oil, sugar, common salt etc. The dough is formed to a desired shape and fried at 80-140°C, thus obtaining the objective dough product for bun with a bean-jam filling, snack foods, etc. Thereby, because of frying relatively at low temperatures, the present product is tasty and gives a unique mouth feeling; furthermore, being good for health and beauty since potatoes and pumpkin are rich in dietary fiber, inorganic substances, vitamins, etc.
