PURPOSE: To obtain dried laver preservable in a retained state of raw algae as much as possible by dehydrating washed raw algae of laver, cooling the raw algae in air while loosening the lump of the raw algae, rapidly freezing and then freeze-drying the raw algae.
CONSTITUTION: Raw algae of laver collected from the sea are fed to a stirrer, washed with sea water to remove dust and sterilized with O3 simultaneously with washing. Then the sterilized raw algae are put in a bag and separated into the raw algae of laver and sea water by a high-speed centrifugal dehydrator. Then the raw algae of laver are stirred and cooled so as not to be exposed to ultraviolet light while being sufficiently brought into contact with air. Then the cooled raw algae of laver are packed in about 1cm thickness in a bag while maintaining a state of raw algae, rapidly frozen to about -35°C and preserved in cold storage. The dried laver thus obtained can be reconstituted into approximately a state of raw algae by immersing in warm water or water in eating.
