PURPOSE: The starting material for fish paste is made to gel into fine strings and the strings are collected and smoked to produce a scallops eye-like fish paste product with high storability, which has color, texture and taste like dried scallops eye.

CONSTITUTION: Fish meat of walleye pollak or other fishes is formed into a flat band and heated to cause gelation. Then the band is cut into strips of 1mm2 cross section and a number of the strips are collected into a cylinder of 3W4cm diameter. The cylinder is cut in 10W15mm length to form short cylinders just like scallops eyes and preferably they are dipped in a solution containing the essence of naturally occurring scallops, MIRIN (sweetened JAPANSE SAKE), chemical flavors, salt and sugar for an appropriate period of time. Then, the dipped cylinders are smoked until the water is removed by 10W20%.
